Making Yogurt and Berry Muffins

Today we made some yogurt and berry muffins.  Ethan loves baking, and I was looking for a really simple muffin recipe that used frozen berries and found this one from Red Ted Art for yogurt muffins.  It's a brilliantly simple recipe that uses the yogurt pot to measure out the quantities of all of the other ingredients, it's the perfect way to cook with a toddler.  Great for Ethan's Problem Solving, Reasoning and Numeracy skills as he learns about measuring out ingredients.

Yogurt and Berry Muffins
Ingredients
  • 1 pot of yogurt (any flavour)
  • 3/4 pot sunflower oil
  • 1 pot sugar
  • 3 pots self raising flour
  • 1 egg
  • 1 pot frozen berries
Mix everything together and spoon into muffin cases (3/4 full), bake at 180 C (gas mark 5) for 15-20 minutes or until golden brown and cooked through.  


Ethan loved baking these today, he happily stirred all of the ingredients together and helped to measure and scoop everything out of the yogurt pot.  I would ask him to repeat back how much of each ingredient we were putting in, and to list all the ingredients at the end.  I have to admit that today I didn't let him scoop the mixture into the muffin cases as it's quite thick and I wanted it to make as many as possible for Ethan to share with his friends tomorrow.  He did do a great job of counting out the muffin cases into the tray though.  The recipe made 15 muffins for us, perfect for 12 to share tomorrow and 3 to try tonight.  They are delicious, we all love them!
