Baby Baked Pancakes

Happy Pancake Day!  We had some lovely proper pancakes for breakfast this morning, which both children really loved, but I decided that it would be fun to do something a bit different for dinner.  It's quite difficult to make anything in a pan that needs my attention at the moment with Ivy in her current 'getting into everything' phase, so I thought that I better come up with some way of baking pancakes in the over...maybe that means that they're technically not pancakes, but they're still just as yummy!



I started out by making a basic pancake batter (flour, milk, eggs) and put it into a measuring cup for easy pouring.  I used a cupcake tin with silicone cupcake holders for easy removing. Then I put a variety of savoury and sweet toppings into little bowls for Ethan to be able to easily prepare the pancakes with me.  


Ethan was able to pour the pancake batter from the jugs into the cupcake tin and then to add savoury toppings; cheese, tomatoes and sausages, then some sweet toppings; blueberries and apple sauce to the rest.  


Then I baked them in the over for about 10 minutes at 200, when they looked nice and golden on the top and were cooked through.  On reflection I should have made the pancakes more shallow, they were quite deep and heavy.  I filled the cupcakes about 3/4 full, but I think that 1/2 full would have been more than enough.  


They may not have been the traditional pancakes, but the kiddies were happy with them anyway, especially with a little extra apple sauce to dip them in!
