Breakfast Cereal Cakes

I can't believe that I haven't shared this recipe on the blog before, because we love these breakfast cakes so much!  I've been making them since Ethan was little, and I've made some changes over the years but they've remained simple and delicious.  The perfect little breakfast takes to bring on the go or for busy mornings when there's no time to sit down for breakfast.


Ingredients:
2 Weetabix
3/4 cup (approx 20grams) Cornflakes
100ml milk
1 banana
1 tsp chia seeds (optional)
handful raisins (optional)

Method:
Preheat the oven to 200 and grease a cupcake tin (I used a heart shaped one, but regular ones are fine)
Crush 1 Weetabix and the Cornflakes until they're quite finely ground, then add the milk to form a paste.  Next, mash in the banana, once that is mixed in well you can crumble up the other Weetabix and mix it in.
Next you can add any optional extras like raisins, other dried fruit or chia seeds (soaked in water first)
Then put equal scoops into six parts of the cupcake tin and press down.
Bake for 25-30 minutes.


Ethan and Ivy both love these, they're so easy to make and now Ethan enjoys to help prepare them as well.  The recipe is so simple that it could be easily adapted with different cereals or different types of milk to suit other diets.
