Making Christmas Shortbread Cookies

Today we finally started our Christmas baking!  Ethan helped me to make some shortbread cookies.  They have to be the easiest (and yummiest) cookies to make, and that's exactly what we needed today.  Ethan loves to bake, and it's great for his Knowledge and Understanding of the World to see how things are made.

We use a really simple recipe:


Shortbread Cookies
Ingredients:
  • 125 g butter
  • 55g sugar
  • 180g plain flour
Method
  • cream butter and sugar together in a bowl
  • stir in flour
  • roll into a ball, then roll out onto a floured surface
  • cut into shapes with cookie cutters
  • place onto a baking tray
  • bake at 190 degrees for 15 - 20 minutes
  • let cool on a wire rack and decorate when cooled

Ethan absolutely loved making these cookies today!  The mixing of ingredients was quite tricky for him, as butter is always difficult to stir.  But when it came to rolling out the dough, he was so excited!  I gave him his own bit of cookie dough on his tray to roll out and then he chose which cookie cutter he wanted to use.  He was great with the rolling and pressing down the cookie cutter, but then got very excited and wanted to lift it up straight away and say 'ta da!'  It was so sweet, and he kept asking to make more and more.  Good thing that he likes it, as we've got lots more baking to do over the next few days!
