Baking Courgette (Zucchini) & Cheddar Muffins

Today Ethan and I did some baking.  I was going to make these muffins while he was napping, but I decided to be brave and try baking together.  I needn't have worried, as he was so good and had so much fun making them.  Cooking and baking are great for his Knowledge of the World as he mixes and combines and watches as the ingredients come together to create something.

We made courgette and cheddar muffins, I would love to give credit to the creator of this recipe, but I copied it out ages ago and don't remember where it's from.  So thank you to whomever made this recipe, as we absolutely love them and they're very healthy.

Courgette (Zucchini) & Cheddar Muffins

Ingredients:
  • 100 g courgettes grated (no need to peel, just cut the ends, wash and grate)
  • 225 g self raising flour
  • 1/2 tsp salt and black pepper 
  • 100g cheddar cheese
  • 175 ml milk
  • 1 egg
  • 55ml olive oil
Method:
  • Preheat oven to 200 C / gas 6
  • Combine flour, grated courgette, seasoning and cheese in a large mixing bowl.
  • Whisk together the milk, egg and oil.
  • Gradually pour the mixture into the dry ingredients.
  • Grease 12 muffin moulds (or use muffin cups) and half fill each one with the mixture.
  • Bake for about 20 minutes, until just firm to the touch.
* I don't use any salt or pepper (have been making these for Ethan since he was very small, so didn't want too much salt in his diet) and they turn out fine.


Ethan had so much fun making these!  He was able to help out loads, pouring the dry ingredients into the bowl and mixing them together, then whisking the wet ingredients (he loved the whisking!)  Then mixing it all up and scooping into the muffin cups (to be honest he wasn't great at the scooping, but he did enjoy himself!)  Then of course seeing the finished product and eating them :)  I think it's the first time that we've made something and he's actually seemed to understand what we were doing, and to recognise that the muffins we took out of the oven were something that he made.
